Cooking in the Kitchen with Chris

Hello

My name is Chris.  I have been married to Randy for 33 years.  We have 4 children, who are all married, and they have combined to give us 8 wonderful grandchildren.

This is my first Blog, and my purpose is to share some kitchen ideas with you.  My goal is to post at least once a week - so I hope you find the ideas helpful.  Please let me know.

Corn on the Cobb:

Do you like corn on the cobb but hate the mess?  I have a great idea to help you overcome that ugly process.

I start by choosing corn that has not had any of the leaves turned back (I don't like it when I go to the market and find half of the corn open and the ears exposed).  I know this is taking a chance, but I have a great source for corn at Horrock's Market and have never had a bad ear. 

Next, take 2 ears of corn and place it in your microwave on high for 6 minutes.  Remove promptly and get the next 2 started.  I find the next step works best if you are wearing clean work gloves - with the leaves still in place, hold the corn firmly and cut off the stalk end.  Make sure you are cutting high enough on the ear to take off a full slice of the cobb and get all of the attached leaves.  Now shake the corn and give it a little twist - it should come up clean and "hair free".

Wrap each ear of corn in wax paper and then place in a freezer bag - I normally put 4 or 5 together.  You can pull out as many as you need for each meal and then seal the bag up again.  Now it's ready for the freezer

A great way to serve it.....

You could just warm it up in the microwave, but I like to put mine in a 9 x 13 baking dish and cover the corn with 4 tablespoons of melted butter that I have mixed with 1/4 teaspoon of sea salt and 1/4 teaspoon of red pepper flakes.  I then bake it in a 375 oven for about 40 minutes, or until hot and steaming.
